Dorset Apple Cake


Ingredients:
225g (8oz) self-raising flour
Ingredients
1 teaspoon salt
100g (4oz) butter
450g(1 Ib) cooking or dessert apples, peeled, cored and chopped
100g (4oz) caster sugar
2 eggs, beaten 
25g (1oz) soft brown sugar



Sugar, Apples, Flour, Salt


Sift the flour and salt into a mixing bowl. Cut the butter into the flour and rub in to a breadcrumb consistency. Mix in the apples, caster sugar and eggs. Turn into a greased 20-23cm ( 8-9 inch) cake tin. Level off the top and sprinkle with the brown sugar.
Bake in a preheated moderately hot oven (200C, 400F, Gas mark 6) for 30-40 minutes.

Before Baking
Allow to shrink slightly before turning out on to serving platter.
Serve hot with clotted cream, or split and buttered. If eating cold, cool on a wire tray before serving.
